He was supposed to stop the car at the edge of the pond. Instead he stepped on the gas and never stopped. Alan focused on what was important and shouted to "Save the camera." The pond was shallow and the car did not sink. I think they ended up actually using that scene.
The other time, Peter was gingerly paddling the canoe with the two others. What nobody knew was that the current was swifter than it looked. If you look carefully at the end of the scene, you can see the canoe start to rock. Then (not filmed) it went over and Peter ended up standing on Bill's head. All three were quickly rescued. They were lucky as it could have gone south.
